Heat oil/ghee in a pan, add mustard seeds; when they pop, add cumin seeds + curry leaves.

Add sliced onions + green chilli; sauté till onions become translucent.

Then add chopped tomato; cook for 2-3 minutes till it softens.

Sprinkle turmeric + red chilli powder, stir well.

Add tamarind pulp (or lemon juice) + salt + water. Bring to a boil.
